I have made Haitian Polanta (Mais moulin) my way. It was such a success that I've decided to share the recipe.
1.
Saute chopped onions, scallions, green, yellow and red pepper in olive oil.
Splash in a shot of rhum barbancourt and cover.
2.
Add chicken broth, crushed garlic, chopped celery and cilantro
3 Taste to ensure spices and salt content are balanced (i.enot overwhelming)
4 Add polanta(mais moulin) and cover.
5 Uncover and stir rapidly, adding more chicken broth if mixture is too thick
6 Cover, reduce fire and let simmer for 20 min.
Hint: Use 3 cups of chicken broth for each cup ofpolanta

rice & red beans, boil your red beans per the instructions on the package just before they get all the way soft strain the beans from the water, put cooking oil in a skillet with seasoning you can salt, garlic, parsley, onions chopped & cooked red beans, stire once or twice lightly, then put in pot make sure that you measure the rice and put 1part rice to 1and 1/2 water, cook on high until pot looks dry cover with lid and turn fire to low and steam, you can lift the rice lightly so the water can coo out. after the beans are cooked the cobining with the rice will only take about 30 minutes cook a big pot and bag up the let overs and heat up only what you are going to eat and it will be good in the fridge for a week happy eating.

No, Griot is not that simple, you gotta have the right combination of spices for it to taste like authentic Haitian griot

when making "pumpkin soup" or "soup joumou" you find that you need more joumou for thickness or color, youn may blend carots as a subtitute.

well i use to live in miami now i stay i georgia and i want to make me some griots i want to know where can i find sour orange from or if they donot carry it what is the next best thing

I too have moved from South Florida to Georgia.
You can find some at times in Food Depot.
You can also find it in supermarkets such as Publix in a bottle.
I believe it is made by Badia or Goya. Particularly in areas with a high Spanish population.
